{Recipes} Taco Casserole

Anything that resembles a taco or burrito is always a big hit at our dinner table.  I made this partially on the stove and then put it in the oven to finish up. This can be made completely on the stove as a "One Pot Wonder".

Ingredients

3 lb ground beef (I bought mine at Kroger this week on sale for $7.47; that's $2.49/lb!)

15 oz can of Black Beans (.69 @ Winco; had from previous shopping trip)

2 Roma Tomatoes, diced. (.88/lb)

4 oz Preshredded Lettuce ($1.69 for 8oz bag; I only used about 1/2 of the bag)

4.5 oz Kroger Sliced Olives ($1.50 for 2.25 oz; $3.00)

8 oz Nacho and Taco Blend Shredded Cheese ($2.69)

Directions

1) Turn oven on to preheat to 400 degrees.

2) Brown hamburger on stove in a large skillet, drain.

3) Add Taco/Fajita or Burrito Seasoning* of choice and 15 oz can of Black Beans into skillet with hamburger. Continue to heat up for approximately 3-5 minutes.

4) While hamburger is browning, dice up the 2 tomatoes, set aside.

5) Once the hamburger, beans and seasoning is ready, pour into a 13x9 casserole dish.

6) Spread layer of cheese on top of hamburger.

7) Cook in oven for approximate 5 minutes to allow the cheese to fully melt.

8) Remove from oven, spread a layer of lettuce on top of cheese, spread layer of diced tomotoes and olives on top of lettuce. Add another layer of cheese, if you really like cheese like us.

9) Cook in oven for another 5 minutes.

10) Remove from oven and serve!

Add a dollop of sour cream* and/or roll into a tortilla ($2.69)

Total Dinner Cost: $18.26 (includes tortillas even though we only used 2).

Serves 8.

$2.28 per serving. (We have tons of left over so I will be using this for lunch tomorrow)

*I did not include cost of seasoning or sour cream in total dinner cost since I have a large containers of both on hand and did not purchase specifically for this dinner.

Menu Plan Monday 2/24/14

It's been a while.....(Isn't that the name of an old grunge song from back in the day? I think by Stain'd?)  Late 90's early 2000?  Something like that.

Anywho, it has been a long time since I have done a MPM or a blog post for that matter.  What the heck happened, where did I go?  Umm, I have no clue and nowhere. Life just kinda happened and really didn't have the time, motivation or desire to blog.  But I am here, still kickin', just doing other things.

I do want to get back into blogging.  I miss it.  I miss you, the readers.  I had a good following there for a while.  I need to get back on track.

Anywho, for now I am going to do a Menu Plan Monday since I planned meals for this week!  Woot!  Woot!

Menu Plan Monday 8/12

It is summer.  It has been sweltering hot in our area many days these past couple weeks which make it very hard to cook on the stove or oven....Just heats up the house even more.

And if I am to be honest our routine has been lacking thus I have not done a proper MPM in quite some time.

But I am this week.  I am tired of not staying on budget and eating not so good.  It is not healthy for me or the kiddos (or the pocketbook).

Sunday

BBQ Pork Chops
Scalloped Potatoes
Apple Sauce

Monday

Spaghetti w/Zucchini
Garlic Bread

Tuesday

Wednesday

Menu Plan Monday 6/17/12

Wowzers...is all I can say.

I haven't done this in a while.  Please pardon moi while I dust off my casserole dish and oven mitts.

No, we haven't been eating out every night but it has been tricky with everything we have had going on over the last couple weeks. Menu Planning was just not high on my mile long to do list. If it took longer than 20 minutes we weren't eating it.  And yes, confession, there have been many a trips eating out.  (Hangs head in shame, yes my children occasionally eat McDonald's.  There I said it!).

It feels good to be back into routine.  Both our bellies and our pocket book I am sure will thank us this week.

Sunday

Chips

Monday

Corn
Garlic Bread

Tuesday

Cornbread

Wednesday

Menu Plan Monday 4/15/13

Ohh how I have missed thee...MPM.

If there is ONE linky I should make a habit of doing every week it is this one.  I have been so bad of late with planning dinners and it is clearly showing in our budget as well as probably my waistline.  With the MPM linky, it always keeps me accountable.  It is time for me to get back on track.

Sunday

Free For All

Monday

Ranch Chicken Tenders
Mashed Potatoes
Green Beans

Tuesday

Spaghetti w/Meatballs
Green Salad

Wednesday

Black Bean & Cheese Burritos

Menu Plan Monday

I.NEED.HELP.

So here I am. I haven't posted a MPM post in a quite a while and my dinners are a mess.

By the time I get home (with my new hours) I am just throwing together whatever...and that is clearly evident.

I need to get back to being better organized with my meals.  For not only my own sanity and health but also for my childrens.

So here goes it.  Here is what I have planned for this week.

Sunday

French Dip Sandwiches
Macaroni Salad

Monday

Frito Chili & Cheese Bake

Tuesday

Ravioli
Salad

Wednesday

Ranch Tenders
Green Beans
Apple Wedges

Thursday

Chicken Stir Fry
Rice

Friday

Hot Dogs
Chips

Saturday

Crock Pot Pork Tenderloin
Red Potatoes
Carrots

There that wasn't too bad.  Now I just need to stick with it.  I have everything, no need to run to store to get anything at this point.  So we are good.  I hope.

Menu Plan Monday

This week since I am off...before starting my new job I did a HUGE grocery shopping trip.  Hopefully it will be able to take us through most of the month with the exception of going to the store for milk, eggs, produce.  I have NEVER spent that much money grocery shopping in one trip. I about had a coronary.

My plan this week is to do a few new kid friendly, easy meals that I can gauge their enthusiasm and possibly put in rotation.  With my new job, I will be getting home a bit later so I am going to have to really stay on top of my menu planning and easy dinner ideas during the week and/or prep a lot of stuff on the weekend (which of course is an awesome thought but it will probably be just that if I am going to be honest).

So here goes this week:

Sunday

Superbowl Fend For Self
(whatever you want to make yourself)

Monday

Pizza Macaroni*

Tuesday

Crock Pot Pork Roast
Carrots
Mashed Potatoes

Wednesday

Ranch Chicken Tenders
Salad

Thursday

Chicken Stir Fry
Rice
Mandarin Oranges

Friday

Eggs & Cheese Muffin Sandwiches
Applesauce

Saturday

TBA--Basketball Tournament in Beaverton

*Instead of hamburger I used just the pepperoni.

What are you cooking this week?  Any quick and easy kid friendly recipes you want to share?

Menu Plan Monday

It is clean out the fridge/freezer/pantry week at our house.  I am finding we have lots of food that if we don't eat it soon, it will be going bad and no sense in wasting.  Heck, it might even be bad already so....here goes something or nothing....

Sunday

Potatoe & Vegetable Casserole*
Applesauce

Monday

Hot Dogs
Corn

Tuesday

Vegetable Stir Fry
Yakisoba Noodles

Wednesday

Spaghetti
Green Salad

Thursday

Grilled Cheese Sammich
Tomatoe Soup

Friday

Veggie Pot Pie
Orange Wedges

Saturday

TBA

I just went to the store to get a few provisions like milk, bread, eggs, but other than that, I did not go full on grocery shopping this week.

It will be interesting what else I find lurking in the fridge/freezer/pantry.  I am a little scared.  LOL.

Do you ever do this?  Does it work out?

I read an article on Huffington Post just recently (although it was published in December) and really hit home about how much food we all really probably have at any given time.  Astonishing really.

I am linking this up this post with Laurie at I'm An Organizing Junkie.

*I will post this recipe shortly because I just threw it together and it turned out really good.

Menu Plan Monday 12/31

I know it is the 31st but technically this will be the first week of MPM for the New Year.  I am excited, are you?

I am turning over a new leaf this year, Operation Shed Some Pounds has begun and my MPM posts will hopefully show that we are eating a bit healthier (not that we were eating unhealthy but...I am throwing in lots of exercise now too).  I am kicking the full on vegetarian eating to the curb because honestly I think that was more counterproductive than it was beneficial for my body and even my doctor agreed.  I will still be making some vegetarian meals but also eating leaner meats and barely any red meat still since that is where I have most of my digestive problems.

Here is what is on our menu for the first week:

Sunday

Homemade Mac N Cheese*

Monday

Spacon Penne Pasta (Spinach and Turkey Bacon= Spacon)
Green Salad

Tuesday

Crockpot Pork Tenderloin
Baby Red Potatoes
Carrots

Wednesday

Red Bean & Rice Burritos
Applesauce

Thursday

Mexican Shepard's Pie (w/lean ground beef)
Tostitos Chips & Salsa

Friday

3 Bean Chili (w/low fat sour cream & cheese)

Saturday

TBA

Yes, you may have noticed several Mexican dishes.  We like Mexican food as do the kids AND in honor of the Oregon Ducks who are in the Fiesta Bowl on Thursday we tailored our meal plan accordingly.  Quack! Quack!

*This is definitely not a healthy meal. My husband made this for dinner while I was at a basketball game with our older son.

What is cookin' in your kitchen this first week of the New Year?

Menu Plan Monday

Welcome back to another edition of Menu Plan Monday hosted by non other than Laura over at I'm An Organized Junkie.  How I wish I could be like Laura....but I guess for now I will have to suffice with myself, a Lord loving, a somewhat completely disorganized homemaker, a nagging wife, an over worked, under paid employee, mother of 4 not so perfect children that I adore.

This week I have decided to plan menus around things I KNOW my children will eat because lately they have been giving me a run for my money.  I decided a long time ago that I am not a short order cook but lately, they just won't eat many of the dinners I have been making so lots of left overs and lots of waste.  I hate waste.

With that in mind I have come up with this  menu that they will be sure to eat hopefully eat.  Here goes nothing....I guess if I don't try, I won't know.

Sunday

Bagels w/cream cheese
Yogurt

(We had a late lunch.  Nobody was very hungry so we opted for this simple snacky type meal)

Monday

Beefy Cheesy Rice Roll Ups
Apple Slices

Tuesday

Grilled Cheese
Tomato Soup
Carrots & Ranch

Wednesday

Beef with Sauteed Green Beans & Mushrooms
Apple Sauce

Thursday

Vegetable Fried Rice
Mandarin Oranges

Friday

Cheesy Tuna Noodles
Pear Slices

Saturday

TBA

What is the one go to meal that you are certain your children will eat?  I need some more "new" ideas.

Hope you had a great Monday and a fabulous week.   What are you making this week?

P.S.S. I am linking this post with I'm An Organizing Junkie.
